1 graham cracker pie crust (sure, make your own!)
1/2 package cream cheese
1 small bowl of whipped cream
1 package countrytime pre-mixed lemonade
Mix lemonade-mix and cream cheese. Fill pie crust! Top with whipped cream. FEAST!
3 medium leeks (clean, slice, dice)
6-8 potatoes (cube or slice)
1 large onion (dice)
2 cans chicken stock (or equivalent)
salt
pepper
nutmeg
olive oil
thyme
1 carton heavy cream
Cut veggies! Sautee leeks and onion in the olive oil for a few minutes. Add potatoes and open stock. Add stock to pan. If it doesn’t cover the potatoes, add water until potatoes are covered. Boil 20-30 minutes until the potatoes are tender. If you’re waiting for someone, wait now! When ready, add the cream — 3/4 to 1 1/2 cup, or to taste! Then add salt, pepper, thyme, and nutmeg to taste. Viola!
2 cups chicken, cooked and diced
2 cups celery, diced
1 cup mayonnaise
2 tbs grated onion (or diced)
2 tbs lemon juice
1 can water chestnuts, cut (optional) 1/2 cup sliced almonds (optional)
3/4 cup grated cheddar cheese
potato chips, crushed
Mix together all ingredients. Put in casserole and cover with cheese. Refrigerate overnight. Before heating, cover with potato chips. Bake 325*F, 45 minutes.
Mind, growing up we also had pimiento and a half can of cream of mushroom soup in this, from what I recall, and rather than a few tablespoons of grated onion, we had like, two cups of chopped onion, something similar for chopped red bellpepper, and at least that much in pre-cooked rice. My mom took my aunt’s recipe and made it a bit of something more than itself.
